Fall in Love with Chocolates from CMBV Confectionaires

If there’s one thing Ken and I have in common, it’s our deep love for chocolates. We’re more into dark chocolate, he likes milk chocolate more than I do and I think we have the same amount of liking for white chocolate. So when a common friend offered to let us taste the chocolates he makes, how can chocolate lovers refuse? Let us introduce you to CMBV Confectionaires Co.

CMBV Confectionaires is a chocolate shop owned by 2 friends – Christian, the general manager, and Marvin, the head chocolatier. They’re a fairly new business which started in November 2012 out of their passion for chocolates, skills in chocolate-making and business savvy. Fast forward to 2013, you can now find CMBV Confectionaires’ hand-crafted gourmet chocolates at Manila Polo Club (Manila’s Best), VASK Modern Tapas & Gastronomic Cuisine Restaurant and soon at KYO Patisserie (the last 2 are located at BGC). Now, going back to their chocolates, we got to meet Marvin and Chris about a week ago and we chatted a little bit about their business. When we opened the box of chocolates they brought in, Ken and I were immediately amazed by the design of each piece. They’re too gorgeous to look at that one might not be able to bear eating them… well, at least for the first 5 minutes or so ’cause you’d want to take photos first. πŸ˜€

While I was reading the descriptions of the flavors of each piece, we couldn’t help but ask Chris and Marvin how they came up with the unique combinations. They said they just think about what they know would taste good together, and they experiment with other ingredients that they could add that they feel should work too. I think it’s a lot of fun, don’t you agree?! πŸ˜€

Oh, by the way, they brought us a bar of their Roasted White Chocolate with sea salt and pink peppercorns. And, OH MY GOSH!! It’s to die for!! πŸ˜€ While I was taking photos, Ken couldn’t even wait and took a big bite off the other piece I left on the table. πŸ˜€

It was love at first bite! I usually would stay away from white chocolate, but this roasted white chocolate bar tasted slightly like caramel… no, toffee! You’ll see actual pieces of pink peppercorns infused in the chocolate bar. These pink peppercorns add a subtle peppery bite with a hint of fruity notes. The sea salt lends another layer of flavor and you get a wondrous burst of all sorts of tastes. Can you imagine how spicy, sweet and salty this chocolate bar now?! I can finish off one bar in a snap of my finger. πŸ˜›

After that experience, imagine how excited I was to finally taste the chocolates in the boxes they gave us. πŸ˜€

12 different flavors, 12 different ways to enjoy chocolates

While I was reading the descriptions of each piece of chocolate, I was reminded of this addictive game I used to play – Chocolatier. I remember the gameplay included creating my own flavors by combining different ingredients from various places across the globe. I super enjoyed that game, so I was definitely looking forward to trying each piece of chocolate they gave us to review.

I decided to follow the guide and taste each one individually. I had glasses of water ready so I can really savor each piece, but I ended up giving my tastebuds a rest by the middle part of my tasting. If you’re planning on eating all these chocolates in one sitting, read on so you’ll have an idea which one you should taste last.

By the way, it was pretty evident that CMBV Confectionaires uses couverture chocolates and high quality ingredients. The chocolates don’t melt in your hands, but in your mouth. πŸ˜‰ The artistry of each piece is simply amazing, especially after you learn about the thought process behind the designs.

Without further ado, here are the flavors that we got to sample. And please, pardon the bite marks. πŸ˜›

 

Minted Calamansi

I know, dark chocolate is known to pair well with mint or anything citrusy, and combining them all together in one piece of chocolate, let alone a combination of dark and milk chocolates, may be too much that you won’t taste each flavor separately. But, it was quite lovely. πŸ™‚

 

Salt & Pepper Caramel

Pink peppercorns, by the way, are more related to berries than pepper. However, they do have this peppery bite that’s a little fruity.

We were told this flavor is their bestseller, and we were not disappointed. I was actually surprised when the salted caramel (which is becoming more and more popular now) oozed out of the chocolate when I bit into it. The coat easily crumbled and let out the lusciously gooey caramel inside. This isn’t too cloying and the pink peppercorns added an interesting layer of flavor.

I was supposed to only eat half of each piece for the tasting and for this review, but I couldn’t resist gobbling up the first 2. πŸ˜€

By the way, the scribble designs on the sides of this chocolate were hand-painted individually by Marvin. Cool, eh? πŸ™‚

 

Binondo

I was curious about the name, and I was told it’s because it’s a mix of Chinese spices and the red tea. For me, though, it had this lovely earthy flavor to it that reminded me of Indian flavors. Ken agreed and he said he would’ve called this Mumbai instead. πŸ˜‰ This was one of the mouth-watering flavors among the dozen ones I got to try.

 

Santol

Inside the intricately designed dark chocolate shell, you’ll find the santol membrillo or marmalade. Ken instantly gushed about this flavor upon his first bite. It had this pleasing, lip-smacking sourness that he loved – asim-kilig daw. πŸ˜€ The sourness contrasts pretty nicely with the dark chocolate.

 

Brazilian Coffee

Okay, first, I should’ve eaten this last. This had a very strong flavor compared to the rest of the chocolates, so I HIGHLY recommend you finish off your tasting with this one.

Don’t get me wrong, I LOVED this. There’s a roasted Brazilian coffee bean inside. It was delightfully bitter, and the espresso ganache was smooth and stimulating. I actually wanted more that I almost was enticed to eat Ken’s piece. πŸ˜€

By the way, the concept on the design of this chocolate was amusing. Marvin told me he was inspired by the red coffee stirrer, which resulted to the red paint on the middle of the chocolate. You’d be surprised by what inspires them on their designs and flavors. Chocolatiers are artists and I’m truly awed by the craftsmanship behind their chocolates. πŸ™‚

 

Anise & Orange

Dark chocolate plus orange is a wonderful flavor combination on its own, but adding star anise took it up a notch. The anise flavor was strong, but not enough to turn anyone off. It was a nice play of flavors that really worked. πŸ™‚

 

Gingered Cerveza Negra

Dark chocolate cup filled with a milk chocolate Cerveza Negra ganache with a hint of ginger, topped with roasted walnuts.

First off, Marvin told me that the chocolates infused with alcohol were designed into cups, like drinking spirits (e.g., tequila, vodka, rum, gin, etc) in shot glasses. Cool, eh? I love how he came up with the designs that make you go, “Ohhhh I get it!!” πŸ˜€

Gingered Cerveza Negra

This had the pleasing bitterness of Cerveza Negra. Don’t worry, it’s nothing overwhelming. It was well-balanced with the milk chocolate and the dark chocolate. I sensed the ginger as an aftertaste and Ken said he can taste it when he draws air into his mouth, just like you would when drinking wine. πŸ˜€ The roasted walnuts lent a crunchy texture and flavor that I enjoyed too (if you’ve been reading my posts before, I’m not a big fan of anything with nuts in it).

 

Sencha Green Tea

Sencha is the most popular tea in Japan, and being a fan of green tea, I knew, without a doubt, that I would absolutely love this. And I did!! The ganache was rich and creamy, with a mild bitterness and sweetness brought about by the green tea. This was easily a favorite! πŸ™‚

Marvin also told me about the design concept behind this chocolate. He wanted to make it look like branches of a Cherry Blossom (Sakura), which is probably the most well-known tree in Japan. And, again, each Sencha Green Tea chocolate is hand-painted by him. All I can say is, “Marvin, IKAW NAAA!!” πŸ˜€

 

Kaffir Lime & Coconut

This is a delish twist to the classic combo of coconut and lime. The kaffir lime imparts a mellow tartness and zingy flavor to this rich and creamy chocolate concoction. Yum! πŸ™‚

 

Chamomile & Juniper Berry

There’s this flavor from this chocolate that reminded us of the freshly harvested organic honey we tasted from Bohol Bee Farm (argh… we haven’t blogged about it yet and it’s been a year na! :D). Weird, I know, but both Ken and I tasted it.

Chamomile and Juniper Berry

Typically, I would stay away from chamomile because of its floral aroma, but I wanted to find out how I’d like this combination. Thankfully, the mildly sharp, citrusy and tart flavor of the juniper berries tamed the flowery taste of chamomile.

 

Gumamela

Of all the flavors of these boxed chocolates, I wasn’t looking forward to this. πŸ˜€ I HATE flowery anything… uhm, hate is a strong word, but I avoid food that smells and tastes (or even sounds :D) like flowers. However, I was surprised that I actually liked this for its subtle tangy taste and sweetness. Oh, I like the purple color of the ganache too! πŸ™‚

 

Gin Pomelo

When I saw the name of this chocolate, it reminded me of the good ol’ days when my barkada would hang out at our house and drink various cocktails we could think of. Gin Pomelo was one of our favorites, and it’s a popular mix for Pinoys. This is why I was intrigued by this flavor. Chris told us that they thought, since we enjoy drinking Gin Pomelo, a chocolate infused with this flavor combination would also appeal to us. Well, did we like it?

Yes! They used Gin Bilog for this, by the way, and you can really taste it. It had this mild kick from the gin, and fruity sweetness from the pomelo. The white chocolate brought them all together. It did leave this sensation on my taste buds that I couldn’t shake off for a few minutes. Then I remembered – that’s exactly what I get from drinking a shot of Gin Pomelo. πŸ˜€ I’m more of a wine drinker now kasi so I forgot.

Whew! That’s it! 12 flavors of boxed chocolates from CMBV Confectionaires. I enjoyed each piece as I try to distinctly taste all the ingredients mixed into each chocolate concoction. πŸ˜€

Sure, you might not be too giddy about all the flavor combinations, but let me tell you something (and this is from me and Ken): at the end of the tasting, it felt like all the ingredients and flavors were meant to be together. Props to Chris and Marvin for their creativity. πŸ™‚

First, because it reminds me of my childhood (Ive’d always used these flowers in portraying a food i am preparing for our “bahay-bahayan and luto-lutuan”. Secondly, I love dark chocolates. I don’t know how a peruvian dark chocolate tastes like. I presume that every bite of these chocolate artwork is an awesome experience, and will be a DEJAVU to me that I was brought back to my early years. I am seeing myself as one of the characters in RATATOUILLE (remember Anton Ego eating his childhood fave ratatouille dish prepared by his mom?) That’s it!

I want to try the gumamela flavor kung ano ba talagang lasa nun if naging chocolate. lalo na ung salted caramel.     If I would create my own chocolate, i would mix almond, cashew and mocha with gumamela flowers and it will turn to dark red combination of chocolate. I will also mix it with edible flowers :))

    Here are my answers:

    #1. The flavors that i would love to try are all of them, but the flavors that I know I would love to have the most would be the Salt and Pepper Caramel and Sencha Green Tea. Why? Because aside from having a sweet tooth, IÒ€ℒm into flavors that I know will make a Γ’β‚¬ΛœBANGÒ€ℒ in my mouth. The idea of peppercorn with salted caramel inside a white chocolate just makes me drool, and I really like flavors that contrast when you hear them yet blend well when you taste them. As for Sencha Green Tea, IÒ€ℒm an avid green tea lover, especially the Macha one. Anything that has green tea and with chocolate on them, IÒ€ℒd love them and IÒ€ℒd eat them. I also like how he hand-painted them and incorporated the sakura tree in the chocolate as well, makes it even more delightful to nomnom them.

    #2. If I would come up with my own chocolate, I would incorporate the two of my most favourite food in the world, Nutella and Bacon! A nutella ganache with bits of bacon as the surprise center of the chocolate, and then I would coat it first with salted toffee. The final coat would be white chocolate infused with the essence of rose and vanilla and then sprinkle the half part the chocolate with a little bit of cacao dust. The bitterness of cacao will reduce the sweetness of the whole chocolate. The design would be simple, I would only like my chocolate to be contained on a cushion and silk like it is a jewelry. ItÒ€ℒs name would be something unforgettable such as Ò€œthe BaconellaÒ€!

  24. #1: Salt and Pepper Caramel. I think the taste is not new for me since I love caramel but I might be wrong whenever I got a taste of this. It looks very simple yet sophisticated. The caramel inside is very tempting. :p~

    #2: Hmmm. ‘Soya and cream cheese’ flavor. I’m not really sure if it exists already but I just combined my favorites: cheesecake and soya (drink). It may be looked the same with a white chocolate though, which is my favorite also. :3 A bit weird but aahhh heaven for me! For the design, clean white lang yung color pero may edible gold on top. Mehehe. So delicate!

I would definitely love to try all the flavors, being the chocoholic that I am. πŸ˜€ As Deanna Troi said, “I’ve never met a chocolate I didn’t like.” Although, I have to admit, there are some chocolates that you would just love more compared to the others. I guess I wouldn’t know which ones for sure, unless I try them all, right? Forrest Gump’s momma did assert that “Life was like a box of chocolates. You never know what you’re gonna get.”

    2. Since Halloween is coming soon, I think chocolates inspired by this popular frightening fest should be in order. Milk chocolate shaped into jack-o-lanterns and a pumpkin ganache center with hints of vanilla, cinnamon, and nutmeg. It’s the right combination of sweet and spice (and everything nice). It may be a bit childish, but I’m sure even adults would enjoy this Halloween-themed chocolate.

    Now, something more for the adults. Chocolates and coffee are two of the things I love so much, so I think it would be perfect to combine these in one decadent chocolate. It would be dark chocolate shaped into a coffee cup, swirled at the top with white chocolate in a latte art design. And of course, a coffee bean surprise at the center, previously dipped in a mixture of milk chocolate and espresso. Both designs I have in mind are so literal, I know, but I think they are just so cute. πŸ˜€

    #2: I love chocolates but since i cannot have plenty of these.. i think i would come up of my chocolate… a high percentage of dark cocoa chocolate with chopped almond and raisins.   46. I want to try Gin Pomelo because I love both Pomelo and chocolates, it was in never in my wildest dreams that they can be combined. For the GIN part, that’s good to try for a little kick but they say alcohol is best consumed with sweets — so i guess it is going to be a perfect combination.

    If I make my own combination, i will go for with Durian and chocolate. It is truly an Asian treat from Davao, Philippines and Malaysia and I know Milk Chocolate is so yummy and Durian is so creamy so It’s just going to be perfect with the distinct taste and the same yummy creamy choco taste. πŸ™‚

  76. My first choice is Sencha Green Tea, aside from the combination of white chocolate & green tea, the Sakura design really has an appeal to me. Like, it’s the first chocolate I will get from the box because I want to take a closer look of the design that is specially hand-painted by Marvin, hoping to find Sakura flowers there. Hihi! Then 2nd would be the Gin Pomelo, coz it reminded me the first time I got drunk. Haha! It’s been a long too, so tasting ‘it’ on this genius-ly created chocolate would be a privilege. (naks!)

    Since I prefer white chocolate over dark, I would create a combination of white choco, green mango, & Dark choco. I want it to be simple, so it will be just in round shape made in 3 layers. Dark chocolate ganache for the inner/core layer, that would be the filling; then, the middle would be a green mango jam that still has the ‘asim’ factor; and for the outer, white chocolate shell with marble design w/ the color of green mango. Perfect combination that is very Pinoy. ^_^

And yes, I do love mango, custard, and avocado and perfectly combining it with chocolate is just heavenly. The design for the mango-custard can be simple. The white chocolate is designed like a mango (the chocolate can be around 1-2 cm thick), and inside it is the mango-custard.     2. If I could create a flavor, I would do grapefruit and basil filling for a refreshing, tart yet grounded taste. I would wrap this in a dark chocolate shell in the shape of a leaf, with a thin vein of edible goldleaf painted down the middle. Luxurious, yes, but hopefully also delicious.

    If I would come up with a chocolate flavor combination, I would love to have bitter gourd and white chocolate because I hate bitter gourd yet I think if it would be a chocolate flavor, I would definitely start liking it. The design would be simple, the chocolate is green, you won’t smell the bitter gourd yet when you tasted it, you will fall in love with the bitter gourd.
