There are but a few world class hotels in the Philippines that celebrate the culinary heritage of their host country. Diamond Hotel is one of those few, and they promote our rich cuisine by launching an annual Filipino Food Festival. This year, they have asked 3 of Manila’s most celebrated chefs to come aboard and showcase their prowess by reinventing all-time Pinoy favorites at The Best of Filipino Cuisine lunch and dinner buffet in Corniche Restaurant from May 13–23, 2014.
FILIPINO CELEBRITY CHEFS + DIAMOND HOTEL EXECUTIVE CHEF
Filipino celebrity chefs Bruce Lim, Sau del Rosario and JP Anglo join Diamond Hotel’s Executive Chef Marko Rankel in celebrating the flavors of Filipino cuisine. We loved every twist they added to the dishes they prepared for this food festival. 🙂
Chef Bruce Lim
He is the proud owner of Chef’s Table in Bonifacio Global City, Taguig, where they offer traditional and mouth-watering Filipino food. He also opened Mise en Plus Foods Inc., a commissary and food production company in Pasig City.
Our number one favorite from the dishes that Chef Bruce prepared for this year’s Filipino Food Festival is his Fried Pusit with Sweet Salted Egg Cream Sauce. Its perfect balance of sweet and salty is seriously addictive that, if we didn’t have to come to work that night, we would have definitely partnered it with beer! 😀
Another dish we can’t stop raving about is his Kilawin na Lapu-Lapu with Corn and Grilled Pork. It’s a dish that has a lot going on, but the flavor is surprisingly harmonious.
What’s a Filipino food festival without our world-renowned adobo, right? Chef Bruce deviates from the norm by transforming an old, traditional dish into Adobo Sliders with Grilled Pina Slaw on Kaiser Buns.
The Filipino Food Festival also offers Chef Bruce’s other dishes like Kalderetang Itik, Roasted Turkey Inasal, Pork Belly wrapped Tenderloin, Salmon Cured in Lambanog, Pinoy Oyster Rockefeller, and many more.
Chef Sau del Rosario
He owns Villa Café, which features heirloom recipes from his hometown, Angeles in Pampanga. He also opened the Museum Café or M Café at Ayala Museum in Makati.
Chef Sau brings his Kapampangan roots into the table with his Pampanga Sisig with Foie Gras, Fried Eggs and Shallot Confit, which takes a traditional Pinoy dish to new heights by adding a subtle French flair.
No Filipino food fest is ever complete without any of the delicious food from Ilocos. Chef Sau made sure that the Ilocanos were represented well with his irresistible Bagnet Kare-Kare with Truffle Macadamia Sauce.
Chef JP Anglo
Chef JP Anglo may look familiar to you because he was one of the judges on Junior Master Chef Philippines. He is also the owner of Sarsa Kitchen + Bar and of Mu Shu, a Chinese restaurant in Bacolod.
Chef Jayps’ Ilonggo Lechon Baboy will surely make any Ilonggo proud. His take on the traditional Pinoy roasted pig was flavorful from its crispy skin down to its meat. And don’t even get us started with Chef JP’s sarsa. It was thick and so tasty that you only need a few spoonfuls to get the maximum flavor.
His Banana Wrapped Baked Salmon with Kalabasa Gata was the first thing that caught my eye when we were taking photos of the buffet spread. The presentation was a breath of fresh air with its dense bed of kalabasa gata seducing you to dive right in.
Chef Marko Rankel
Of course, the Executive Chef of Diamond Hotel surprised us by pulling out some amazing traditional Filipino dishes from under his sleeves.
His Pork Adobo is truly sensational! Instead of the usual mix of soy sauce and vinegar, Chef Marko braised his pork in red wine together with some German potatoes. Complete your Pork Adobo with various toppings like skewered shrimp, spring onions, garlic flakes, and fried onions.
Chef Marko made his Goto extra special by throwing in foie gras, duck breast, and imported white asparagus from Germany. If that doesn’t impress you, we don’t know what will. 😀

There are a ton more impressive dishes from these chefs at the buffet, so we highly recommend you come by on or before May 23rd to try them all.

The Best of Filipino Cuisine is available during Corniche restaurant’s lunch and dinner buffet. But don’t worry; this is not an exclusive all-Filipino food buffet, so you can still enjoy some of their usual buffet items like Japanese, Italian, and American food, including popular desserts like French macarons, chocolates, and their homemade ice creams. Here are some of the other dishes and choices you can find there.
