Vietnamese Spring Rolls with Peanut Sauce Recipe

I’ve had this craving for Vietnamese Spring Rolls like forever. The only place I know that serves it is a restaurant in Trinoma in Quezon City. We haven’t had time to go there again so I decided to make Vietnamese Spring Rolls myself at home.

Here’s a simple recipe of Vietnamese Spring Rolls with Peanut Butter Sauce that you can easily make at home. Some of you might not be comfortable using peanut butter for a dip or sauce, but, it’s actually good.

Peanut Butter Sauce

Ingredients:

  • Peanut Butter
  • Garlic, minced
  • Soy Sauce
  • Fish Sauce (Patis)
  • Water
  • Parsley

 

Procedure:

1. Mix all the ingredients in a bowl. Adjust amount of each ingredient to your liking.
Most people would minimize the amount of garlic they put in or completely scratch it off the mixture. It’s up to you. Me? I prefer the strong flavors of garlic because it adds a bit of spiciness and tang to the peanut butter sauce.

 

Vietnamese Spring Rolls

Ingredients:

  • Rice Wrappers
  • Lettuce
  • Carrots
  • Bacon
    Shrimp is actually the ingredient for Vietnamese Spring Rolls. But, we didn’t have it available at home when I made these spring rolls, so, I used bacon instead. You can actually replace it with pork or chicken, depending on what you prefer. That’s the beauty of preparing food at home รขโ‚ฌโ€œ you’re in control! ๐Ÿ™‚
  • Rice Vermicelli (also called Mung Bean noodles)
  • Cucumber

 

Procedure:

1. Cook the rice vermicelli.

This is the Rice Vermicelli we used for this recipe. We bought them from SM Hypermarket.

Place rice vermicelli in a bowl of hot water and drain it after 3-5 minutes or al dente.

Note: DO NOT cook it in boiling water so you wouldn’t end up with saggy noodles.

2. Prepare the spring rolls.

The rice wrapper we used is this, which you can also buy from the grocery.

To prepare the rice wrapper, fill a large bowl with warm water. Dip one wrapper into it for a second, just enough to soften the rice wrapper.

Lay wrapper flat and in a row across the center. Place bacon, a handful of vermicelli, carrots, cucumber and lettuce, leaving about 2 inches uncovered on each side.

Fold uncovered sides inward, then, tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.

 

3. Serve the spring rolls with the peanut butter sauce.

That’s it! Very easy and healthful, right? Michelle and I managed to consume 2 1/2 of these spring rolls in one sitting!

  4. this look very delicious however, I can’t cook anything with peanut products. That is a torture for my allergic DD, she loves to taste everything I make, plus i will feel bad if she can’t have any…i love to try this sometimes in a restaurant.

  8. the first time i tried eating this was years ago, at Pho Hua along T. Morato (if my memory serves me right, hehehe). we also tried some of their noodle soups with really fresh ingredients (you put in the mungbean sprouts and fresh sweet basil leaves yourself). it was quite an experience for me. i loved it.
    now you’re making me want to eat these again… ๐Ÿ˜‰

  10. yummy! i think the best part of that is the sauce.. mahilig talaga sa may sauces and lalo na sa may mga peanuts ang indochinese countries..im lucky i could easily have that sa tabi tabi dito sa Phnom Penh =)
