When we went to Pagudpud last December and dined at Emohruo Beach Restobar, I really wanted to recreate their Mango Honey Chicken that we all loved. So, for our Noche Buena in 2010, I decided to cook it for us.

I’m so glad I was able to recreate the dish and it really tasted close to Emohruo’s, except theirs was grilled. It’s very simple to do and I know you’d love this! Recipe, after the jump!

Mango Honey Chicken Recipe

INGREDIENTS:

  • 3-4 chicken breasts, halved, deboned
    You can choose to cut these into pieces if you prefer them bite-sized.
  • 4-6 medium to large-sized ripe mangoes, sliced and minced
    if you want large cuts of mangoes, you can also do that, depending on how much sauce you want. I only used 4 for the one I made.

  • 1/2 cup of honey
    I used the one we got from Baguio.
  • 2 tablespoons lemon juice
  • 1 medium-sized carrot, cut into strips or diced, whatever you prefer
  • 1 red pepper, cut into strips
  • 2 tablespoons of butter
  • salt and pepper

Note: You can also add Baguio beans with the carrots. I didn’t have any available.

 

PROCEDURE:

1. Marinade the chicken with the mangoes and honey.
Coat your chicken breasts with about 2-3 tablespoons of honey, lemon juice, salt and pepper. Then, add 2 minced mangoes (about half to 3/4 cup) and make sure to coat the chicken completely. Let sit for about 10 minutes.

But, of course, itÒ€ℒll be best if you can marinate it for 24 hours before cooking.

NOTE: For cooking the chicken, you actually have 2 options – searing it on a pan OR grilling it. I chose to sear the chicken. But, if you prefer to have that smokiness mixed with the sweetness of the mangoes, then, go with grilling/baking the chicken. Just make sure each side of the chicken breasts are browned.

2. Sear the chicken. (check Note above)
Melt the butter on a sauce pan. Sear the chicken breast pieces for about 2 minutes. Then, add the minced mangoes you used to marinade the chicken in the mixture. Turn the chicken breasts from time to time until both sides are slightly brown.

3. Mix in the rest of the minced mangoes and honey. Let the mixture simmer while turning the chicken breasts for about 10 minutes.

4. Add the carrots and pepper. Let simmer for 5-8 minutes while turning the chicken breasts and mixing everything.

 

That’s it! Very easy, huh? Here’s the result, pardon the presentation. I was on a rush ’cause my parents were already hungry. πŸ˜€

I love cooking, especially now that I’ve got time to actually enjoy preparing different dishes at our kitchen. Glad that our kitchen now is open and cooler than our old one at our home in Navotas. It was so hot in our kitchen back then that you’d need acne treatment products because of how the heat affects your skin. But, now, we even have a kitchen bar. The sink is just in front of the stove. Everything you need is just there so it makes cooking really fun and easy. We’re just hoping we can make our kitchen more organized by adding cabinets. Plus, we’re planning on buying a new refrigerator, a new oven and microwave oven.

  1. ginugutom ako. so mag-hate comment na naman ako? hahaha! pwede bang wag na lang manga? parang hindi ko mapipigilan yung sarili kong wag muna kainin yung manga kapag nahiwa ko na.

    1. Surprisingly, it’s not too sweet. That’s why I choose to use honey when sweetening dishes I cook now ’cause it doesn’t give that much sweetness, but just enough to fulfill yah.
      If you want, you can add a li’l chicken broth if you feel it’s too sweet for you.

  2. A chicken dish with mango and honey is surely a great treat! The two ingredients have very rich flavorings, adding a unique twist to the traditional goodness of chicken. This meal will surely be enjoyed by friends and family especially this holiday season.

  3. I will try this recipe. The method is exactly how I cook orange chicken. Now my chicken will have a new twist. It’s mango time… hehehe.
